1. Soy and Sugar Fried Cauliflower 

What you need: 

1 large head cauliflower, cut into florets 

1 egg, beaten 2 scallions, 

thinly sliced 1 cup ice water 

1/2 cup all-purpose flour, 

sifted 1/2 cup cornstarch 

1/3 cup garlic chilli sauce 

3 tablespoons brown sugar 

2 tablespoons soy sauce 

2 tablespoons sesame seeds 

2 teaspoons sesame oil 

1 teaspoon grated ginger 

1 teaspoon baking powder 

1 teaspoon Kosher salt 

Vegetable oil for frying 

Whisk together ice water, flour, cornstarch, baking powder and salt in a bowl to prepare the batter. 

Heat vegetable oil over medium-high heat in a pan. Working in batches, toss cauliflower in batter and fry for 4 minutes per side. Remove from heat and place in a plate lined with paper towels.

 Combine chilli sauce, brown sugar, soy sauce, sesame oil and ginger in a bowl. Toss fried cauliflower in the mixture, sprinkle with scallions and sesame seeds then serve. 


2. Brussels Sprouts Macaroni 

What you need: 

1/4 kilogram Fusili pasta, cooked 3 cups Brussels sprouts, halved 

2 1/2 cups whole milk 

1 1/2 cups white cheddar 

1 cup fontina, shredded 

1/2 cup panko bread crumbs 

3/4 cup freshly grated Parmesan cheese, divided

 1/4 cup butter

 1/4 cup flour 

1 tablespoon olive oil 

Kosher salt 

Freshly ground black pepper 

Arrange Brussels sprouts in a baking sheet brushed with olive oil. Season with kosher salt and ground black pepper then bake in a pre-heated oven (375F) for 30 minutes or until tender. Meanwhile, melt the butter in a saucepan over medium-high heat. Add flour and milk to the pan and whisk together. Season with salt and pepper then allow to simmer for 5 minutes, or until mixture has thickened. Remove from heat then stir in white cheddar, fontina and 1/2 cup parmesan. Mix until cheeses are well-incorporated in the mixture. Fold in Brussels sprouts and cooked pasta then transfer everything to a baking dish. Combine bread crumbs and remaining parmesan in a small bowl and season with salt and pepper. Sprinkle mixture over mixture over pasta. Bake for 30 minutes in an oven (375F).

Best eaten with crisp roti's and paranthas, they could easily be the star attraction in an Indian meal. In the South of India chicken curry is just as popular as it is in the North albeit made with different ingredients. While in the north the curries are made with onions tomato and yogurt in the south Coconut or coconut milk is a regular addition to give body to a good chicken curry. From the coconut and bedagi chilly based masala of Karnataka to the curry leaf and onion base of an Andhra style peppery chicken curry or the cooling coconut milk based curries of Kerala - there is one thing that is common for curries from the south - plenty of flavor. These delicious curries are served with famous South Indian accompaniments like idlis, dosas, appams, iddiappams, Kerala paranthas etc

A chicken curry from Bengal on the other hand is slightly runnier than in other pockets of the country and is called a jhol. While you might be more familiar with a machcher or fish curry from the east, they do make a delightful chicken curry too - murgir jhol. Eaten with a generous helping of rice, make sure you make this Bengali curry with either mustard oil or jhorna ghee. In the West, Gujarat and Rajasthan are predominantly vegetarian but Maharashtra makes up for lack of a good chicken curry from the region.

 The flavorful pandhra or white curry and the fiery tambda rassas from Kolhapur are world famous. Even the Malvan coast boasts of delicious chicken curry served with crisp fried multiflour vadas called vade or rice flour bhakris called amboli. One of the simplest chicken curries you can make is a home-style chicken curry with the most basic ingredients at home. All you need to do is heat some oil or ghee in a pan and sauté a few whole spices in it. Add a puree of onions and sauté followed by tomato puree, powdered spices and chicken pieces on the bone and cook till the chicken in well done and juicy. As this is a quick and easy chicken curry the chicken is directly added to the curry, but you could also pan fry it before adding it to the curry.

Digestion! How Does It Affect Your Body And Health?

 Everyone was born with a digestive system. 

Why would it affect my body or my health? Nothing that complex about it, it's just something like an auto pilot. Food comes in, gets digested, the stomach takes what it needs and what's left over goes out again; just a simple everyday procedure. These are the workings of a normal healthy digestive system. Most people do not realize that 80 percent of the immune system is within the digestive track. The focal point here is, only with a healthy gut and only than optimal health is achievable. No matter what age, our digestive system is an important function in our body and health. How does it all work? 

According to research as high as eight out of ten people may have a digestive issue. Increasing food intolerance is by many ignored or gone unnoticed. Many health problems can come from bad or wrong intestinal bacteria, probiotics-I.E, healthy bacteria. The best and only option to get a good amount of probiotics is the right food; this will restore the body's gut flora. Many health issues as well as allergies usually come from poor gut health. The digestive system often is not performing the way it should and this can cause undigested food bacteria and metabolic wastes. The digestive track goes a long way down; the length of an entire digestive system starting from the mouth all the way down is about 30 feet or 9.1 metres long. That alone seems incredible and makes it even worse if something goes wrong with it. 

Maintaining a healthy digestive system means a natural healthy diet, regular exercise, eating slowly, moderately and regularly, chewing food well and eating food rich in fibre. When choosing fermented food, don't get this mixed up with any pasteurized version. Pasteurization will do just the opposite and destroys many of the natural occurring properties and does not correct any bad gut syndromes. Many of these probiotic products contain added sugars, high fructose, corn syrup, artificial sweeteners and colouring. These have no health benefits; most of them will only worsen your health. Fermented food! 

To ensure optimal gut flora regularly consume fermented food such as various fermentations of sauerkraut, cucumber, cabbage, squash, onions, eggplant, turnips, carrots etc. Introduce fermented vegetables to your diet gradually and slowly work your way up. Fermented vegetables are easy to prepare in your own kitchen and are most effective in getting good amounts of healthy probiotics in your meals. This will also improve your fibre intake and at the same time can lower the risk of developing many diseases including colorectal cancer which is often linked to bad digestion over long time. Reduce the intake of processed food as much as possible; they generally have little nutrition or fibre and are known to contain large amounts of saturated fats. 

Drink plenty of fluids especially filtered water, but make sure to never ever drink water with a hot meal; this would have a deadly effect on your digestive system. Regardless of age you will notice changes in your gut; you will notice when positive changes occur as the intestinal bacteria ratio changes from bad to good and has gone back into a normal balance. Digestive problems will disappear. The body will absorb good food and nutritional supplements better. 

The immune system becomes healthier and better equipped to fight off illness and diseases and your general health will improve. Be vigilant of what you consume because your health and life depends on it. The power of knowledge will give you the health you deserve!
