While not all of us have the
luxury of time to cook extravagant dinners, we can opt to cook simpler, time-saving recipes that are just as good. If you're
pressed for time, try these easy yet delicious 5-ingredient chicken recipes for dinner!
Easy Broccoli and Chicken Casserole
What you need:
- 1 can condensed broccoli cheese soup
- 1 package chicken stuffing mix
- 2 cups cubed cooked chicken
- 1 cup broccoli florets
- 1 cup shredded cheddar cheese
Mix together broccoli cheese soup (don't dilute!), cooked chicken and broccoli florets in a large bowl. Transfer mixture to an
11x7-inch baking dish. Prepare the chicken stuffing mix according to the instructions in the package then add it to the baking
dish. Top with cheddar cheese.
Cover and bake in a pre-heated oven (350F) for 20 minutes.
When ready, remove cover and
continue baking for another 15 minutes. Allow to cool for several minutes before serving.
Apricot Spiced Chicken
What you need:
- 4 boneless and skinless chicken breast halves
- 1/3 cup apricot preserves
- 1/4 cup chilli sauce
- 1 tablespoon hot mustard
- Salt to taste
Combine apricot preserves, chilli sauce, mustard and salt (you can season with pepper if desired) in a saucepan and stir
together over medium heat for about 3 minutes, or until heated through. Coat a large baking pan with cooking spray.
Place
the chicken in the baking pan and broil for 6 to 8 minutes per side, brushing generously with spicy apricot sauce during the
last few minutes of cooking.
Allow to cool and sit for a few minutes before serving.
Mexican-Style Chicken Rice
What you need:
- 1 can diced tomatoes with onions
- 1 package Mexican-style rice and pasta mix
- 1 jalapeno pepper, seeded and chopped
- 2 cups cubed chicken breasts, cooked
- 2 tablespoons butter
Melt the butter in a skillet and cook the rice and pasta mix for 5 minutes or until browned. Add the tomatoes (with liquid),
some water (about 3/4 cup) and the contents of the rice seasoning packet. Bring the mixture to a boil. Lower heat and
continue cooking for 10 minutes.
When ready, stir in the chicken and jalapeno.
Cover and cook until liquid is absorbed, about
10 minutes.
